Ahhh…Finally, a Day Off! Cooking Up a Storm…The Day in the Life of a Busy Realtor

After six weeks of sitting the Parade of Homes and taking care of my sellers, it’s finally Easter weekend.
OK, I spent four hours in the office today (ask Jen Crockett at my Keller Williams Market Center…I was there!) but I still felt like it was a bit of a vacation. I haven’t figured out why I feel that way. Maybe no appointments. Maybe I figured no one would call me. Maybe I figured everyone else was busy with their families for the Easter holiday weekend.
Here’s what I did when I got home at 3ish…I cooked! Like, cooked…food! That is my very favorite hobby, pleasure, passion. Whatever you want to call it.
Tonight I made a hummus from scratch.
Hummus, you say? So what. What’s the big deal about hummus? Oh my! I didn’t know I was such a rock star! Maybe it was because I was concurrently watching The Food Network and I got some inspiration. Nahhh. I have always liked to cook. And, this stuff was awesome. There’s some left over. I bet it’s even better tomorrow!
“Cook” is a weird word. To me, “cook” means to throw a crappy can of green beans in a pot and boil the heck out of them. Or, throw a chuck roast in the oven and let it dry out. Why do I think that? Well, Mom wasn’t the best cook. I hope she doesn’t read this. I don’t think she will.
Anyway, my sister, Ruthie, brother, Ken and myself are all really into being “cooks”. Those two are actually chefs. I am in awe of my siblings. We figured it was feast or famine with ole’ Mom and now we are feasting, baby! They really know how to rock and roll in the kitchen. Enough about us.
Tony, my sweet hubby, and I had a great dinner tonight. It was a conglomeration of appetizers gone wild.
I made meatballs with some interesting sauce, hummus with cucumbers, olives and roasted pita bread tips, fresh broccoli with veggie dip, yadda, yadda, yadda.
Here’s the hummus recipe that I would like to share with you that I made tonight:
INGREDIENTS:
* 1 16 oz can of chickpeas or garbanzo beans
* 1/4 cup liquid from can of chickpeas
* 3-5 tablespoons lemon juice (depending on taste)
* 1 1/2 tablespoons tahini
* 2 cloves garlic, crushed
* 1/2 teaspoon salt
* 2 tablespoons olive oil
PREPARATION:
Drain chickpeas and set aside liquid from can. Combine remaining ingredients in
blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3-5
minutes on low until thoroughly mixed and smooth.
Place in serving bowl, and create a shallow well in the center of the hummus.
Add a small amount (1-2 tablespoons) of olive oil in the well. Garnish with
parsley (optional).
Serve immediately with fresh, warm or toasted pita bread, or cover and
refrigerate.
Variations
For a spicier hummus, add a sliced red chile or a dash of cayenne pepper.
This recipe totally rocked! I added a couple of extra garlic cloves. Yowser! Life is good!
